Beef and Vegetable Hash
Ingredients
  • 1 cup water
  • 1 cup uncooked instant rice
  • 1 pound lean ground beef
  • 2 onions, chopped
  • 1 large green bell pepper, chopped
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (8 ounce) can tomato sauce
  • 2 tablespoons chili powder
  • 1 (8.75 ounce) can whole kernel corn, drained
  • salt and pepper to taste
  • 3 slices processed American cheese
Instructions
1
Preheat your oven to the desired temperature of 350 degrees Fahrenheit (175 degrees Celsius).
2
To prevent sticking, lightly coat a 2 quart round casserole dish with a thin layer of oil or cooking spray.
3
Next, combine 1 cup of water in a medium-sized saucepan and bring it to a rolling boil.
4
Add instant rice to the boiling water, cover the saucepan with a lid and immediately take it off the heat source.
5
Allow the rice to sit undisturbed for 5 minutes, allowing it to soften and rehydrate.
6
In a large skillet heated over high heat, cook ground beef with sliced onions and chopped green pepper until browned.
7
Add diced tomatoes, tomato sauce, and chili powder to the skillet and stir well.
8
Simmer the mixture over medium-high heat for 20 minutes, allowing the flavors to meld together.
9
Combine the cooked rice with the beef mixture, stirring until well combined.
10
Add corn kernels to the mixture and season with salt and pepper to taste.
11
Pour the rice-beef mixture into the prepared casserole dish.
12
Cut American cheese slices in half and place them evenly over the top of the casserole.
13
Finally, bake the casserole in a preheated oven for 15 to 20 minutes or until the cheese is melted and bubbly.
