Beef and Potato Musaka
Ingredients
  • 5 tablespoons olive oil
  • 1 pound ground beef
  • 1 teaspoon ground paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 4 potatoes, peeled and cut into 1/2-inch cubes
  • 1 (6.5 ounce) can tomato sauce
  • 1 tablespoon chopped summer savory (chubritsa)
  • 1 cup water, or as needed
  • 2/3 cup yogurt
  • 1 large egg, lightly beaten
Instructions
1
Preheat your oven to a moderate temperature of 325 degrees Fahrenheit (165 degrees Celsius).
2
Take a large skillet and heat olive oil over medium heat. Cook the ground beef in hot oil until it reaches a crumbly and evenly browned consistency, typically taking 5 to 7 minutes. Add some flavor with paprika, cumin, salt, and pepper, then stir in diced potatoes. Allow these to cook for 2 to 3 minutes before adding the next ingredient.
3
Introduce tomato sauce and summer savory into the skillet, stirring well to combine. Then add just enough water to cover the ingredients partially.
4
Transfer the meat mixture to a 9x13-inch baking dish and spread it out evenly. In a separate bowl, whisk together yogurt and beaten egg until smooth. Spread this mixture over the meat to cover it completely.
5
Bake the dish in your preheated oven until the top is golden and nicely browned, usually taking 30 to 40 minutes.
