  • 1 jalapeno pepper, seeded and minced
  • 1 tablespoon curry powder
  • 3 cloves garlic, minced
  • 1 (1 inch) piece fresh ginger, peeled and grated
  • 2 bay leaves
  • 1 (16 ounce) can diced tomatoes
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon salt
  • 1 pound ground beef
  • 2 cups frozen peas

Heat a large skillet over medium-high heat and melt the ghee, allowing it to simmer. Add cumin seeds and stir until they release their aroma and start to sizzle, approximately 1 minute. Introduce the onion, jalapeño pepper, curry powder, garlic, ginger, and bay leaves into the skillet; stir occasionally until the onion becomes translucent, roughly 5 minutes.

Next, add the canned tomatoes to the skillet and stir until they're well combined with the other ingredients, approximately 2 minutes. Incorporate the chili powder, cumin, coriander, turmeric, and salt; stir thoroughly to ensure everything is well incorporated. Introduce the beef into the skillet and cook, using a wooden spoon to break up the meat, until it reaches your desired level of doneness, roughly 5 minutes.

Once you've achieved the perfect doneness for your beef, reduce the heat to low and cover the skillet. Allow it to simmer for about 15 minutes, allowing all the flavors to meld together. Add frozen peas to the skillet and cover it again; continue to simmer until they're heated through, approximately 10 minutes.

If you prefer a thicker consistency for your curry, increase the heat to medium and remove the lid. Simmer the curry, uncovered, for an additional 5 minutes, allowing the sauce to reduce and thicken.
