Beef and Mushroom Guinness Pie
Ingredients
  • 3 tablespoons olive oil, divided
  • 1 pound cubed beef stew meat
  • 2 slices bacon, chopped
  • 1 white onion, chopped
  • 1 carrot, sliced
  • 1/3 pound crimini mushrooms, sliced
  • 1 clove garlic, crushed
  • 1 teaspoon white sugar
  • 1 1/2 tablespoons all-purpose flour
  • 1 cup Irish stout beer (such as Guinness®)
  • 1 1/4 cups beef stock
  • 1/2 teaspoon ground thyme
  • 2 bay leaves
  • 1/2 teaspoon cornstarch, or as needed
  • 1 teaspoon water
  • 1 sheet frozen puff pastry, thawed
  • 1 egg, beaten

Preheat your oven to a medium-high temperature, approximately 350 degrees Fahrenheit.

In a large cooking vessel, heat 2 tablespoons of olive oil over an intermediate heat source. Introduce beef into the pot and cook until it is nicely browned on all sides, taking around 10 minutes; set the cooked beef aside.

In the same pot, heat the remaining 1 tablespoon of olive oil; add bacon and cook until it starts to develop a brown color. Introduce the onion, carrot, mushroom, garlic, and sugar into the pot; cook and stir until the vegetables are tender and have developed a rich brown hue, taking around 10 to 15 minutes more.

Mix the flour into the pot until it is fully incorporated and smooth, then gradually add Guinness and beef stock. Introduce thyme, bay leaves, and the reserved cooked beef into the pot; cover it and bring the mixture to a rolling boil; reduce the heat to a low simmer until the beef is tender, approximately 1 hour and 15 minutes; stir occasionally.

Remove the cover from the pot, increase the heat to a medium level, and let the stew boil until it has thickened slightly, taking around 15 minutes more. Mix cornstarch with water and stir it into the stew; let it simmer for 30 minutes to allow the flavors to meld together. Remove the pot from the heat; discard the bay leaves.

In a separate area, preheat your oven to 350 degrees Fahrenheit.

Spread the filling into a pie dish with a diameter of 9 inches; trim puff pastry into a circle with a diameter of 10 inches, and place it on top of the filling. Use your fingers to pinch and crimp the edges of the pastry with a fork, sealing it to the dish; cut 2 steam vents into the pastry using a sharp knife. Brush the top of the pie with beaten egg.

Bake the pie in the preheated oven until the crust is golden brown, taking around 30 to 40 minutes.
