- 4 soft egg buns or brioche
- 1 tablespoon softened butter
- 4 ounces Manchego cheese, grated
- 1 tablespoon vegetable oil
- 3 medium onions, sliced
- 1 tablespoon brown sugar
- salt and pepper to taste

- 1 cup ranch dressing
- 1 roasted red pepper, quartered
- 1 teaspoon Spanish paprika
- 1 pinch powdered saffron

Begin preparing the burgers: Combine ground sirloin and chorizo in a large bowl, utilizing your hands to thoroughly mix the ingredients until they are perfectly blended. Allow the flavors to meld while you prepare the onions and sauce.

Prepare the onions: Heat oil in a large skillet over medium heat. Add sliced onions, brown sugar, salt, and pepper; cook and stir until the onions have reached a golden brown color, taking approximately 15 minutes to achieve this.

Concurrently, prepare the sauce: Heat oil in a skillet over medium-high heat. Add sliced onions and sauté until they are tender, then transfer them to a blender. Combine ranch dressing, red pepper, paprika, and saffron in the blender; pulse until the mixture is fairly smooth. Refrigerate the sauce until it's required.

Complete the burgers: Preheat an outdoor grill to high heat and lightly oil the grill surface. Shape the meat mixture into four patties, slightly larger than the buns.

Cook burgers on the preheated grill until they are cooked through, taking around 5 minutes per side. Split the buns in half and spread butter on the inside surfaces. Toast the buns briefly on the grill.

Place burgers onto the buns and top with caramelized onions, ranch sauce, and Manchego cheese.
