SERVINGS

Ingredients
- 3/4 pound lean ground sirloin or turkey
- 1 1/2 cups diced red or green bell pepper
- 1 (1.25 ounce) package taco seasoning
- 8 (7 inch) flour or corn tortillas
- 2 cups SARGENTO® Fine Cut OR Traditional Cut Shredded 4 Cheese Mexican
- 1 1/2 cups salsa or picante sauce
- 1 cup shredded lettuce
- 1 cup chopped tomato
- 1/2 cup light sour cream
Instructions
1
Heat a large skillet over high heat; add the meat and bell pepper, then cook for 5 minutes, stirring constantly until the meat breaks apart and loses its pink color; drain excess liquid.
2
Next, add the taco seasoning packet to the skillet and pour in 1/2 cup of water. Bring the mixture to a simmer, leaving it uncovered, and cook for 5 minutes or until the sauce thickens, stirring occasionally.
3
Now, take a tortilla and place 1/3 cup of the meat mixture in the center. Sprinkle with 2 tablespoons of cheese and roll it up tightly, placing seam-side down in a greased 13x9-inch baking dish.
4
After that, spoon some salsa over the top of each enchilada in the baking dish.
5
Cover the baking dish with foil and bake it in a preheated oven at 375 degrees F for 18 minutes, or until the enchiladas are heated through.
6
Finally, remove the foil and sprinkle the remaining cheese over the top of each enchilada. Return it to the oven for 2 minutes, or until the cheese is melted and bubbly. Serve with your choice of lettuce, tomato, sour cream, and enjoy!
