Beaumont Ranch Signature Potato Salad
Ingredients
  • 5 pounds red potatoes
  • 1 (.7 ounce) package dry Italian salad dressing mix (such as Good SeasonsĀ®)
  • 1/4 cup tarragon vinegar
  • 1/4 cup water
  • 1 cup extra-virgin olive oil
  • 1/2 cup chopped celery
  • 1 cup real bacon bits
  • 1/4 cup chopped dill pickle
  • 1/4 cup chopped green onion
  • 3 cups mayonnaise

Place the potatoes in a large container and submerge them completely under water, making sure they're fully covered.

Bring the potatoes to a rolling boil over extremely high heat, then gradually decrease the intensity of the heat to a moderate level, cover them with a lid, and let them cook slowly until they become tender, approximately 20 minutes.

Remove the potatoes from the water and allow them to sit for a short while, allowing any excess moisture to evaporate.

In a separate container, combine the Italian seasoning packet, tarragon vinegar, water, and olive oil in a bowl, stirring until the mixture is perfectly uniform.

Set this dressing mixture aside for later use.

Transfer the cooked potatoes into a large serving dish and chop them roughly with a table knife until they're in small, chunky pieces.

Pour the prepared dressing mixture over the hot potatoes and mix them thoroughly until they're evenly coated.
