  • 1/4 cup prepared yellow mustard

  • 1/3 cup honey
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced green bell pepper
  • 1 (15 ounce) can garbanzo beans, drained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 cup corn kernels
  • 2 cups shredded cooked chicken
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup shredded Cheddar cheese
  • 1 1/2 teaspoons ground cumin
  • 1 tablespoon honey

Begin by preparing the yellow rice according to the package instructions and set aside 1.5 cups of it for later use, saving any leftover rice in the refrigerator for future meals.

Next, preheat your oven to 375 degrees Fahrenheit. In a 9x13 inch baking dish, spray some cooking spray to prevent sticking.

Now, place four tortillas at the bottom of the baking dish. To create a sweet and tangy sauce, combine mustard, sour cream, and 1/3 cup of honey in a small bowl. Mix together the red pepper, green pepper, garbanzo beans, black beans, and corn in a large bowl. Take 1/2 cup of the bean mixture and reserve it for later use.

Combine the chicken, 1/4 cup of mozzarella cheese, 1/4 cup of Cheddar cheese, cumin, the prepared yellow rice, and the honey sauce in the bowl with the bean mixture. Mix everything together until it's well combined.

Pour this mixture into the prepared baking dish. Top with four tortillas, and sprinkle with the remaining 1/4 cup of mozzarella cheese, 1/4 cup of Cheddar cheese, and the reserved 1/2 cup of bean mixture.

Place the dish in the preheated oven and bake until it's hot, bubbly, and cooked through, taking 30 to 45 minutes. If the top starts browning excessively, cover it with aluminum foil to prevent overcooking. Remove the dish from the oven and drizzle it with the remaining 2 tablespoons of honey.
