BBQ Chicken Salad with Southwest Flavors
Ingredients
  • 2 skinless, boneless chicken breast halves
  • 1 head red leaf lettuce, rinsed and torn
  • 1 head green leaf lettuce, rinsed and torn
  • 1 fresh tomato, chopped
  • 1 bunch cilantro, chopped
  • 1 (15.25 ounce) can whole kernel corn, drained
  • 1 (15 ounce) can black beans, drained
  • 1 (2.8 ounce) can French fried onions
  • 1/2 cup Ranch dressing
  • 1/2 cup barbeque sauce
Instructions
1
Heat up your grill to its maximum temperature and lightly brush the grilling surface with a small amount of oil.
2
Cook the chicken on the preheated grill for approximately 6 minutes per side, or until it reaches a safe internal temperature of at least 165 degrees Fahrenheit (74 degrees Celsius). Use a food thermometer to check the internal temperature. Once cooked, remove the chicken from the grill and let it rest for a few minutes before slicing into thin pieces.
3
In a large serving bowl, combine the mixed greens, diced tomatoes, chopped cilantro, corn kernels, and black beans. Top this salad with the sliced grilled chicken and sprinkle some crispy French fried onions on top.
4
To add an extra layer of flavor, mix together the ranch dressing and barbecue sauce in a small bowl. Serve this tasty dipping sauce on the side, allowing everyone to help themselves, or toss it with the salad to coat the ingredients evenly.
