Ingredients
- 5 slices bacon
- 1 onion, chopped
- 2 cloves garlic, finely chopped, or more to taste
- 1 pound lean ground beef
- 1/2 cup barbeque sauce
- 1/2 cup soft bread crumbs
- 2 eggs, beaten
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- 1 teaspoon dried oregano
- 1/2 teaspoon chili powder
- 3 tablespoons barbeque sauce
Instructions
1
Begin by preheating your oven to a hot temperature of 375 degrees Fahrenheit, or 190 degrees Celsius.
2
Next, take some time to prepare a baking dish by greasing it with a non-stick spray or butter. This will ensure that your meatloaf releases easily once it's cooked.
3
In a large skillet, cook some crispy bacon over medium-high heat until the edges start to curl and the fat begins to render, which should take around 1-2 minutes per side.
4
Once the bacon is partially cooked, remove it from the skillet and place it on a plate lined with paper towels. Reserve about 1 tablespoon of the bacon drippings in the skillet for later use.
5
To add some extra flavor to your meatloaf, cook and stir sliced onions and minced garlic in the bacon drippings until they're softened to your liking, which should take around 6-7 minutes. Remove the skillet from the heat and let it cool down.
6
Now, combine the cooled onions and garlic with ground beef, 1/2 cup of barbecue sauce, some bread crumbs, eggs, Worcestershire sauce, Dijon mustard, dried oregano, and chili powder in a large bowl. Mix everything together with your hands until it's well combined.
7
Form the beef mixture into a log-shaped meatloaf and place it in the prepared baking dish.
8
Wrap some of the partially cooked bacon slices around the meatloaf, tucking the ends underneath to secure it.
9
Bake the meatloaf in the preheated oven for 35 minutes. After 25 minutes, brush it with an additional 3 tablespoons of barbecue sauce to add some extra flavor.
10
Continue baking until the meatloaf is no longer pink in the center, which should take around 10 more minutes. To ensure it's cooked to a safe temperature, insert an instant-read thermometer into the center of the meatloaf and check that it reads at least 160 degrees Fahrenheit.
11
Finally, let the meatloaf stand for 10 minutes before slicing it up and serving.
