  • 1/3 cup apple cider vinegar
  • 1/4 cup packed light brown sugar
  • 3 tablespoons molasses
  • 2 tablespoons yellow mustard
  • 1 teaspoon Worcestershire sauce
  • 1 tablespoon smoked paprika
  • 1/8 teaspoon cayenne pepper
  • 1 teaspoon freshly ground black pepper
  • 1 tablespoon kosher salt
  • 1 teaspoon garlic powder
  • 2 1/2 cups reserved bean cooking liquid
  • 6 slices thick-cut bacon

Soak the dry beans in a bowl, covering them with water, and allow them to sit for 8 hours or overnight.

Drain the soaked beans and transfer them to a large pot filled with 3 quarts of cold, fresh water. Add a bay leaf, a pork shoulder, and an onion to the pot. Heat the mixture over high heat until it begins to simmer.

Gradually reduce the heat to a lower setting and stir the mixture occasionally. Skim off any foam that forms on the surface if desired.

Continue to simmer the bean mixture until it reaches your desired level of tenderness, approximately 1 hour.

Meanwhile, combine the ingredients for the barbecue sauce in a bowl using a whisk. Set this mixture aside until it's needed.

Heat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Transfer the tender bean mixture to a deep, 15x10-inch baking dish using a spider strainer.

Pour the prepared barbecue sauce mixture into the baking dish, followed by 2 ½ cups of the bean cooking liquid. Place slices of bacon on top.
