Bangers and Mash with Onion Gravy
Ingredients
  • 4 links pork sausage
  • 2 pounds potatoes, peeled and cubed
  • 1/4 cup butter
  • 2 tablespoons milk
  • 1 teaspoon dry mustard powder
  • salt and ground black pepper to taste
  • 1 tablespoon butter
  • 2 large onions, chopped
  • 6 cups beef broth
  • 2 cups red wine

Preheat your oven to 200 degrees Fahrenheit (95 degrees Celsius).

Cook the sausages in a skillet over medium-low heat until they are nicely browned, approximately 5 minutes on each side; transfer them to an oven-safe dish and keep them warm in the preheated oven.

Boil some water in a saucepan over medium heat and add sliced potatoes; cover the pan with a lid to trap the steam. Let it cook until the potatoes are tender, taking around 10 to 15 minutes. Remove from heat and let it steam dry for a minute or two before mashing with 1/4 cup of butter, milk, dry mustard, salt, and black pepper until it reaches a fluffy consistency. Set aside.

Melt 1 tablespoon of butter in a skillet over medium-high heat and sauté sliced onions until they become translucent and start to develop a light brown color, roughly 8 minutes. Add beef broth and red wine to the skillet; bring it to a boil and let it simmer until the liquid has reduced by half, approximately 10 minutes. Season with salt and black pepper.

Serve the sausages alongside the mashed potatoes, followed by a generous pour of onion gravy on top.
