Banana Rice Pudding with Whipped Cream
Ingredients
  • 2 bananas
  • 1 tablespoon white sugar
  • 1 cup milk
  • 1 cup cooked short-grain white rice
  • 2 egg yolks
  • 3 tablespoons white sugar
  • 2 tablespoons butter, melted
  • 1 pinch salt
  • 1/2 cup whipped cream
Instructions
1
Cut one banana in half and sprinkle 1 tablespoon sugar evenly over it.
2
Mash the other halves of bananas using a spoon in a pan placed over medium heat; stir constantly and cook until the bananas are heated through, have a slightly browned appearance, and form one cohesive mass, approximately 5 to 10 minutes. Remove from the heat source.
3
Combine milk, rice, egg yolks, 3 tablespoons sugar, butter, and salt in a saucepan over low heat until the mixture thickens slightly and emits steam, 2 to 3 minutes. Stir in the mashed bananas until they are fully incorporated and heated through. Transfer the mixture to a refrigerator-safe container and refrigerate until it has cooled slightly, at least 15 minutes.
4
Blend whipped cream into the chilled rice pudding mixture until it is smooth and well combined.
5
Heat a pan over medium heat; cook the sugared banana slices using a spoon, stirring constantly until the sugar dissolves and caramelizes, 2 to 4 minutes. Serve over the chilled rice pudding.
