  • 3/4 cup milk
  • 1/4 cup pumpkin puree
  • 2 tablespoons vegetable oil
  • 1 large egg

Combine the all-purpose flour, whole wheat flour, sugar, baking powder, salt, and cinnamon in a bowl; reserve for later use.

In another bowl, blend the ripe banana, milk, canned pumpkin, vegetable oil, and egg until well combined; then gradually incorporate the flour mixture just until it reaches a moist consistency.

Preheat a non-stick skillet coated with a thin layer of oil over medium heat. Pour the batter by large spoonfuls onto the skillet and cook until air pockets appear and the edges become dry, approximately 3 to 4 minutes. Flip the pancakes over and cook until they are golden brown on the other side, around 2 to 3 minutes. Continue with the remaining batter.
