Banana Pumpkin Oat Muffins
Ingredients
  • 1 cup all-purpose flour
  • 1 cup oat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon ground ginger
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves
  • 1 stick butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 2 eggs
  • 1/2 cup vanilla Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 cup pumpkin puree
  • 3/4 cup mashed ripe bananas
  • 1/2 cup semisweet chocolate chips
  • 1/2 cup chopped toasted pecans
  • 1 cup vanilla-coconut granola
  • 3/4 cup semisweet chocolate chips
  • 1/2 cup chopped toasted pecans
Instructions
1
Preheat your oven to the optimal temperature for baking, which is 350 degrees Fahrenheit or 175 degrees Celsius.
2
In a large mixing container, combine the dry ingredients such as flour, oat flour, baking soda, baking powder, salt, cinnamon, ginger, nutmeg, and cloves in a single bowl.
3
In another mixing container, cream together the butter, brown sugar, and white sugar using an electric mixer until they form a smooth mixture. Then add eggs, yogurt, and vanilla extract to the bowl and mix on medium speed until well combined.
4
Add pumpkin purée and mashed bananas to the wet ingredients mixture, blending them together until a smooth consistency is achieved.
5
Mix in chocolate chips and pecans into the wet ingredients mixture, blending them well.
6
In a separate bowl, combine granola, chocolate chips, and pecans to create the topping, setting it aside for later use.
7
Fill each muffin cup two-thirds full with the batter mixture, spooning it into the prepared cups.
8
Place the muffin cups in the preheated oven and bake until a toothpick inserted into the center of each muffin comes out clean, which should take 25 to 30 minutes.
