  • 2 cups milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon butter
  • 1 (12 ounce) package vanilla wafers, divided
  • 4 medium bananas, sliced, or more to taste
  • 1/4 teaspoon cream of tartar
  • 5 tablespoons white sugar
  • 1/2 teaspoon vanilla extract

Preheat the oven's temperature setting to 375 degrees Fahrenheit (the equivalent of 190 degrees Celsius).

In a separate container, mix together the sugar, flour, and salt in order to create a uniform blend. Set the egg whites aside for later use in making meringue.

In a heavy saucepan, whisk the egg yolks over medium heat until they become frothy. Gradually add the sugar mixture to the saucepan, alternating with milk and vanilla extract, stirring constantly throughout the process. Bring the mixture to a gentle simmer on the stovetop and cook until it thickens slightly, taking around 8 to 10 minutes. Add the butter to the saucepan and continue stirring until the mixture reaches a pudding-like consistency, taking an additional 5 to 7 minutes.

Place half of the wafers at the bottom of a baking dish, followed by half of the sliced bananas and then cover them with half of the pudding mixture. Repeat this layering process one more time.

In a separate bowl, prepare the meringue by whipping the reserved egg whites until they become light and airy. Gradually add a pinch of cream of tartar to the bowl, stirring until soft peaks form. Add sugar to the mixture and continue whipping on high speed until stiff peaks are achieved. Fold in a hint of vanilla extract to the meringue mixture. Spoon the meringue over the pudding.
