  • 1 scoop protein powder
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1 banana
  • 2 eggs
  • 1/2 cup cottage cheese
  • 1 teaspoon vanilla extract
  • water as needed

Heat a cooking vessel such as a griddle or large skillet over an intermediate temperature.

Combine rolled oats, protein powder, brown sugar, cinnamon, and baking powder in a food processor until well combined; transfer to a large container.

Combine mashed banana, eggs, cottage cheese, and vanilla extract in the food processor until well blended; pour into container with dry ingredients and mix until a thick batter forms. Add water to the batter as needed to achieve the desired consistency.

Spoon approximately 1/4 to 1/2 cup of batter onto the preheated cooking surface. Cook until the bottom is golden brown, 3 to 5 minutes. Flip pancakes and continue cooking until the other side is also golden brown and the center is fully set, 3 to 5 minutes more.
