Banana-Nut Cake with Rich Caramel Icing
Ingredients
  • 1 1/4 cups white sugar, divided
  • 1 tablespoon ground cinnamon
  • 1/2 cup chopped pecans
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup shortening
  • 1 cup mashed banana
  • 2 eggs
  • 1 tablespoon pure vanilla extract
  • 1/2 cup sour cream
  • 6 tablespoons butter
  • 3/4 cup packed dark brown sugar
  • 6 tablespoons milk
  • 1 teaspoon pure vanilla extract
  • 2 cups sifted powdered sugar
Instructions
1
Preheat your oven to 350 degrees Fahrenheit, or 175 degrees Celsius.
2
Next, take a moment to prepare your baking vessel by greasing it with butter and dusting it lightly with flour, giving the fluted tube pan a smooth surface.
3
In one bowl, combine 1/4 cup of granulated sugar and a pinch of cinnamon. Add some chopped pecans to the mixture, stirring until they're evenly distributed.
4
In another bowl, sift together 2 cups of all-purpose flour, baking powder, baking soda, and a pinch of salt. This will help create a smooth batter.
5
Using an electric mixer, cream together 1 cup of granulated sugar and some softened shortening in a large bowl until it reaches a light and fluffy consistency.
6
Add 2 ripe bananas, some eggs, and a few drops of vanilla extract to the bowl. Mix until well combined.
7
Next, add 1/2 cup of sour cream to the bowl and mix until just blended. Then, gradually add the flour mixture and continue beating until everything is well combined.
8
To finish preparing your cake, sprinkle 2 tablespoons of the sugar-nut mixture into the prepared pan. Top half of the cake batter, followed by the remaining nut mixture and then the final layer of cake batter.
9
Place your cake in a preheated oven at 350 degrees Fahrenheit, or 175 degrees Celsius. Bake for 40 to 45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
10
Once your cake is done, remove it from the oven and let it cool for 5 minutes in the pan. Then, transfer it to a wire rack to continue cooling.
11
Meanwhile, melt some butter in a saucepan over low heat. Add 2 tablespoons of brown sugar and 1 tablespoon of milk, stirring until the mixture comes to a boil. Continue boiling for 1 to 2 minutes.
12
Remove the saucepan from heat and add a few drops of vanilla extract. Gradually mix in some powdered sugar until it reaches your desired consistency.
13
Finally, top the cooled cake with the sweet and sticky frosting.
