Ingredients
- 3/4 cup unsalted butter, at room temperature
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups white sugar
- 2 1/2 cups all-purpose flour
- 2 teaspoons ground cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon ground nutmeg
- 3/4 cup 1% buttermilk
- 2 cups mashed ripe bananas
- 1 cup chopped toasted walnuts
Instructions
1
First, preheat your oven to 350 degrees F (175 degrees C).
2
Next, take a fluted tube pan - similar to a Bundt pan - and grease it thoroughly before flouring the inside.
3
Meanwhile, combine softened butter, eggs, and a hint of vanilla extract in a large mixing bowl using an electric mixer until the mixture becomes light, airy, and fluffy. Gradually introduce sugar into the mix until everything is well combined.
4
In a separate, medium-sized bowl, whisk together flour, cinnamon, baking powder, baking soda, salt, and a pinch of nutmeg. Mix these dry ingredients lightly using a fork.
5
Gradually incorporate approximately one-third of the flour mixture into the egg mixture, taking care not to overmix. Then, add half of the buttermilk and alternate between adding flour mixture and buttermilk until you've used them all, finishing with the flour mixture.
6
At this stage, fold in sliced bananas and chopped walnuts until just combined.
7
Transfer the batter to your prepared pan and bake in the preheated oven until a toothpick inserted into the center of the cake comes out clean, approximately 45 minutes.
8
Remove the cake from the oven carefully while it's still hot and transfer it to a separate plate. Allow it to cool down before serving.
