Preheat your oven to 350 degrees Fahrenheit, or 175 degrees Celsius. To prevent the loaves from sticking, lightly spray two 9x5-inch loaf pans with cooking spray and dust them with flour.

In a large mixing bowl, combine 2 tablespoons of vegetable oil and 1 cup of sugar. Use an electric mixer to blend the mixture until it's smooth and creamy, then add 2 eggs one at a time, beating well after each addition.

In another bowl, mash 3-4 ripe bananas with 1 tablespoon of lemon juice until they're well combined. Gradually add the banana mixture to the oil mixture, stirring until just incorporated.

To make the dry ingredients, sift together 2 cups of all-purpose flour, 1 teaspoon of baking powder, and a pinch of salt. Gradually add the dry ingredients to the wet mixture using the electric mixer on low speed, mixing until just combined; avoid overmixing.

Fold in 1 cup of chopped walnuts to add texture and flavor to the bread. Pour the batter evenly into the prepared loaf pans.
