Ingredients
- 4 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 cup sour cream
- 1 teaspoon baking soda
- 1 cup mashed ripe banana
- 1 teaspoon vanilla extract
- 1 cup margarine
- 1 cup white sugar
- 2 large eggs
- 1 cup chopped walnuts
- 1/2 cup unsalted butter
- 1 cup brown sugar
- 1/4 cup milk, or more as needed
- 2 1/2 cups powdered sugar, or to taste
Instructions
1
Begin by preheating your oven to 350 degrees Fahrenheit, or 175 degrees Celsius. Next, take a moment to grease your cookie sheet with some cooking spray.
2
In a large mixing bowl, whisk together the flour, baking powder, and salt until they're well combined. In a separate bowl, whisk together the sour cream and baking soda before adding in the mashed banana and vanilla extract.
3
Using an electric mixer, beat together the margarine and sugar until they form a smooth consistency. Crack in your eggs one at a time, mixing well after each addition.
4
Mix the banana-sour cream mixture into the wet ingredients until everything is fully incorporated. Gradually add in the dry ingredients, stirring until they're well combined.
5
Add some chopped nuts to the mixture and stir until they're evenly distributed. Scoop out small spoonfuls of batter onto your prepared cookie sheet.
6
Bake the cookies in a preheated oven, checking on them every now and then until they're lightly golden brown on the bottom and still slightly soft in the center, about 10 to 12 minutes.
7
While your cookies are baking, prepare a simple frosting by melting butter in a saucepan over low-medium heat. Add in the brown sugar and reduce the heat to its lowest setting.
8
Stir constantly as you bring the mixture to a boil, then continue boiling for 2 minutes. Remove from heat and let cool for 10 to 15 minutes.
9
Once the frosting has cooled, stir in 1/4 cup of milk until it reaches your desired consistency. If the frosting becomes too thick, simply stir in a little bit of milk to thin it out.
10
Gradually add powdered sugar to the frosting, stirring until you reach your desired consistency. Spread a layer of frosting onto cooled cookies and enjoy.
