Banana and Strawberry Muffins
Ingredients
  • cooking spray
  • 1/2 cup white sugar
  • 1/4 cup unsalted butter
  • 2 small ripe bananas, mashed
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 5 small strawberries, chopped
Instructions
1
Preheat your oven to 350 degrees Fahrenheit, which is equivalent to 175 degrees Celsius.
2
Next, take some cooking spray and give six muffin cups a good coating to prevent them from sticking during baking.
3
In a medium-sized bowl, combine granulated sugar and softened butter. Using an electric mixer, blend the ingredients until they become light and airy.
4
Add sliced bananas, one egg, and a few drops of vanilla extract to the bowl. Mix everything together for about a minute.
5
Then, take a separate bowl and sift in some flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the banana mixture and mix until just combined.
6
Add some chopped strawberries to the batter and stir them in gently.
7
Now, pour the prepared muffin batter into the six greased muffin cups.
8
Bake the muffins in your preheated oven for 16 to 18 minutes, or until a toothpick inserted into the center of one of them comes out clean.
9
Once done, let the muffins cool for 5 minutes before transferring them to a wire rack to continue cooling completely.
