Ingredients
- 1 cup butter, softened
- 1 1/4 cups white sugar
- 1 1/2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 6 egg whites
- 1/2 cup white sugar
- 1 recipe Lady Baltimore Frosting
- 1/2 cup raisins, coarsely chopped
- 1/3 cup chopped pecans
- 1/3 cup chopped candied cherries
- 2 teaspoons vanilla extract
Instructions
1
Preheat the oven to 350 degrees Fahrenheit, or 175 degrees Celsius.
2
Prepare three round cake pans by greasing and dusting them with flour.
3
Mix together butter or margarine, 1 and a quarter cups of sugar, and one and a half teaspoons of vanilla extract in a large bowl until you have a smooth consistency.
4
Beat the mixture until it becomes light and airy.
5
In another bowl, combine flour, baking powder, and salt.
6
Gradually add the dry ingredients to the butter mixture in three stages, alternating with milk in two stages, starting and ending with the dry ingredients.
7
In a separate bowl, whip egg whites until they become soft and fluffy.
8
Add sugar gradually while whipping until the mixture becomes stiff and holds its shape.
9
Fold the whipped egg whites into the batter to create a smooth texture.
10
Pour the mixture into prepared pans.
11
Bake the cakes for 25 to 30 minutes, or until a wooden skewer inserted into the center comes out clean.
12
Allow the cakes to cool.
13
To make the filling, combine 2 cups of Lady Baltimore Frosting, raisins, nuts, cherries, and one teaspoon of vanilla extract or sherry in a bowl.
14
Use this mixture as the filling to spread between layers.
15
Spread the remaining frosting on top and sides of the cake.
