  • 1/3 cup balsamic vinegar
  • 1/2 cup chicken broth
  • 2 teaspoons minced lemon zest, or to taste
  • 1 tablespoon capers, or to taste

Combine the flour, garlic salt, and pepper in a plastic bag. Thoroughly blend the ingredients by shaking the bag vigorously, then add the pork tenderloin pieces and shake once more to evenly distribute the coating. Discard any remaining excess flour from the bag.

Heat a generous amount of oil in a large skillet over medium-high heat. Sear the pork medallions in the hot oil until they achieve a golden-brown appearance on both sides, taking approximately 2 to 3 minutes per side. Introduce the balsamic vinegar and chicken broth into the skillet, causing it to rapidly boil. Immediately lower the heat to medium and let the mixture simmer until the pork reaches a safe internal temperature, approximately 3 to 4 minutes. Remove the cooked pork to a serving platter, then stir the lemon zest and capers into the simmering sauce. Continue to cook the sauce until it reaches your preferred consistency.
