Ingredients
- 12 large sea scallops
- 1/4 teaspoon seafood seasoning (such as Old Bay®)
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 2 tablespoons unsalted butter
- 1 tablespoon canola oil
- 1/2 cup dry white wine
- 1 tablespoon balsamic vinegar
- 1 teaspoon Dijon mustard
- 1 tablespoon chopped fresh tarragon
Instructions
1
To prepare the scallops, gently pat them dry using a paper towel to remove any excess moisture and facilitate an even sear. Next, mix together the seafood seasoning, salt, and pepper, then sprinkle this blend evenly onto both sides of the scallops.
2
Heat a large skillet over medium-high heat by melting butter and oil together. Add the scallops, taking care not to overcrowd the skillet; cook until they turn golden brown and develop a crust on both sides, approximately 3 minutes per side. If necessary, cook the scallops in batches to prevent steaming and ensure they are cooked evenly. Be cautious not to overcook the scallops, as this can lead to an unpleasant texture.
3
Once the scallops are cooked, transfer them to a plate and cover with a lid to keep them warm.
4
In the same skillet, combine wine, vinegar, and mustard. Heat over medium heat, stirring constantly to release the browned bits from the bottom of the skillet. Allow this mixture to simmer for 3-4 minutes, until it thickens slightly and develops a syrupy consistency.
5
Finally, drizzle the cooked scallops with this glaze and garnish with tarragon
