  • 1/4 cup olive oil, divided
  • 4 skinless, boneless chicken breast halves - cut into strips
  • salt and pepper to taste
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 orange bell pepper, thinly sliced
  • 1 medium onion, thinly sliced
  • 4 large cloves garlic, finely chopped
  • 1 tablespoon dried basil
  • 1/4 cup balsamic vinegar, divided

Collect and prepare all the necessary ingredients for this dish.

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the chicken and sprinkle with salt and pepper; cook, stirring occasionally, until it reaches a golden brown color, taking approximately 3 to 5 minutes. Remove the chicken from the skillet and place it in a separate bowl, setting it aside for now.

Use the remaining olive oil to heat up the skillet again. Add sliced bell peppers and onions, stirring occasionally as they cook until tender, taking around 3 minutes.

Add minced garlic to the skillet and stir constantly as it cooks until fragrant. Next, add 2 tablespoons of balsamic vinegar and chopped basil; stir well to combine.

Return the chicken back into the skillet. Reduce the heat to a low setting, cover it with a lid, and let it simmer for about 20 minutes or until the chicken is no longer pink and the juices run clear.

Just before serving, stir in the remaining 2 tablespoons of balsamic vinegar to add a tangy flavor to the dish.
