Ingredients
- 2 large zucchini, thinly sliced
- 2 tablespoons olive oil
- 1 large onion, diced
- 2 cloves garlic, minced
- 1 (16 ounce) jar spaghetti sauce
- 1 cup shredded mozzarella cheese

Preheat your oven to a medium-hot temperature of 325 degrees Fahrenheit (or 165 degrees Celsius, if you prefer metric).

Fill a large container with water and place it on the stovetop; bring the water to a rolling boil, then carefully add your sliced zucchini and cook until it reaches your desired level of tenderness; make sure to drain the water thoroughly afterwards.

In a medium-sized pan, heat some olive oil over a moderate flame; add sliced onions and minced garlic to the pan and cook until the onions are soft and fragrant, taking about 2 minutes.

In a large baking dish measuring 9x12 inches, combine your cooked zucchini slices with the sautéed onions and garlic; pour a generous amount of marinara sauce over the top, stirring everything together until it's well combined. Finally, sprinkle some mozzarella cheese on top.

Place the casserole dish in your preheated oven and bake until the zucchini slices are heated through and the cheese is melted and bubbly, taking around 20 minutes to complete.
