Ingredients
- 2 teaspoons vegetable oil
- 1 onion, diced
- 1 tablespoon curry powder
- 1 tablespoon mustard seeds
- 2 teaspoons cumin seeds
- 1/2 cup vegetable broth
- 2 small potatoes, cut into small cubes
- 1 carrot, cut into small cubes
- 1/4 pound frozen peas
- 1 (17.5 ounce) package frozen puff pastry, thawed
- 1 egg, lightly beaten
- 2 cups mayonnaise
- 2/3 cup sour cream
- 1/2 cup white sugar
- 1/2 cup lemon juice
- 1/2 cup horseradish
- 2 tablespoons curry powder, or more to taste
- salt and ground black pepper to taste
Instructions
1
Heat a generous amount of oil in a large cooking vessel over an intermediate heat setting. Introduce the onion, curry powder, mustard seeds, and cumin seeds into the pan; cook for a duration of 3 minutes. Introduce broth and potatoes into the pan; cook until they become tender, which typically takes 3 to 5 minutes. Add carrot and peas; cook for an additional 2 minutes. Remove the pan from heat and allow the filling to cool down.
2
Preheat your oven to 400 degrees Fahrenheit. Lightly coat a baking sheet with a thin layer of oil or cooking spray.
3
Unfold puff pastry on a flat surface and cut it into 16 thin, uniform pieces. Distribute 2 to 3 tablespoons of the filling onto each pastry piece. Cover the edges of the pastry with a beaten egg and press them together using a fork to seal the edges. Arrange the samosas on the prepared baking sheet.
4
Place the samosas in the preheated oven and bake until the pastry is puffed up and golden brown, which usually takes 12 to 15 minutes.
5
While the samosas are baking, combine mayonnaise, sour cream, sugar, lemon juice, horseradish, curry powder, salt, and pepper in a bowl. Cover the bowl with plastic wrap and refrigerate the sauce until it is needed. Serve the samosas alongside the prepared sauce.
