  • 1/4 pound frozen peas
  • 1 (17.5 ounce) package frozen puff pastry, thawed
  • 1 egg, lightly beaten
  • 2 cups mayonnaise
  • 2/3 cup sour cream
  • 1/2 cup white sugar
  • 1/2 cup lemon juice
  • 1/2 cup horseradish
  • 2 tablespoons curry powder, or more to taste
  • salt and ground black pepper to taste

Heat a generous amount of oil in a large cooking vessel over an intermediate heat setting. Introduce the onion, curry powder, mustard seeds, and cumin seeds into the pan; cook for a duration of 3 minutes. Introduce broth and potatoes into the pan; cook until they become tender, which typically takes 3 to 5 minutes. Add carrot and peas; cook for an additional 2 minutes. Remove the pan from heat and allow the filling to cool down.

Preheat your oven to 400 degrees Fahrenheit. Lightly coat a baking sheet with a thin layer of oil or cooking spray.

Unfold puff pastry on a flat surface and cut it into 16 thin, uniform pieces. Distribute 2 to 3 tablespoons of the filling onto each pastry piece. Cover the edges of the pastry with a beaten egg and press them together using a fork to seal the edges. Arrange the samosas on the prepared baking sheet.
