Ingredients
- 4 sheets parchment paper
- 4 (4 ounce) fillets tilapia
- salt and ground black pepper to taste
- 1 large tomato, chopped
- 3 cloves garlic, finely chopped
- 4 fresh basil leaves, chopped
- 1 1/2 teaspoons capers, drained
- 4 teaspoons lemon juice
- 1/4 cup butter, divided
- 1 cup white wine
- 1 tablespoon butter, or as needed
Instructions
1
Preheat your oven to the desired temperature of 350 degrees Fahrenheit (or equivalently, 175 degrees Celsius).
2
Next, take a baking sheet and apply a generous amount of butter to it, ensuring the bottom surface is well-coated. This will facilitate browning when the packets are baked.
3
Prepare four sheets of parchment paper by folding each sheet in half lengthwise and positioning a tilapia fillet at the center of one side of the fold. Season the fish with salt and black pepper to taste.
4
Add a layer of equal portions of tomato, garlic, basil, and capers on top of the tilapia fillet. Drizzle a small amount of lemon juice over the fish for added flavor.
5
Place one tablespoon of butter on top of the tilapia fillet, followed by a light drizzle of white wine.
6
Roll up the sides of the parchment paper first, then fold the top edge over, leaving a small gap along one edge to allow for expansion during baking.
7
Grease the bottom of each packet with a small amount of butter and arrange them on the preheated baking sheet.
8
Bake in the oven for 15 to 20 minutes, or until the fish is tender and flakes easily with a fork.
