Baked Sweet Potato with Sautéed Onions and Peppers
Ingredients
  • 1 large sweet potato
  • 1 teaspoon olive oil
  • 1/2 sweet onion, sliced
  • 1 red bell pepper, cut into strips
  • 1 roasted green chile pepper, chopped
  • 1/4 cup vegetarian ground beef
  • 1/4 cup plain yogurt
  • salt and ground black pepper to taste
Instructions
1
Preheat your oven to the optimal temperature for baking, which is 350 degrees Fahrenheit or 175 degrees Celsius.
2
Take a sweet potato and position it on a baking sheet, where it will undergo the necessary transformation to become tender. This process should take approximately 30 minutes.
3
In a skillet, heat a generous amount of olive oil over medium heat. Then, add the onion, red bell pepper, and chili pepper to the skillet and stir them until they are extremely tender. This should take around 15 minutes.
4
Mix the vegetarian ground beef into the skillet with the onion, red bell pepper, and chili pepper. Continue to cook until the ground beef is heated through, which should take about 5 minutes.
5
Once the sweet potato has finished baking, cut it in half lengthwise. Then, place the cooked sweet potato on a flat surface and top it with the mixture from the skillet. Finish the dish by placing a dollop of yogurt on top and sprinkling it with salt and black pepper.
