Baked Sweet Gao

  • 1 (16 ounce) box sweet rice flour (mochiko)
  • 2 cups brown sugar
  • 3/4 cup white sugar
  • 1 teaspoon baking soda
  • 1 (13.5 ounce) can coconut milk
  • 2 cups milk
  • 2 teaspoons vanilla extract
  • 2 tablespoons sesame seeds

Preheat your oven to the desired temperature of 350 degrees Fahrenheit or 175 degrees Celsius. Cover an 8x12 inch baking pan with aluminum foil, extending it all the way up to the sides of the pan.

Combine the rice flour, brown sugar, white sugar, and baking soda in a large mixing bowl. Create a depression in the center of the mixture and carefully pour in the coconut milk, milk, and vanilla extract. Mix everything together until it forms a uniform consistency.

Pour the prepared batter into the lined baking pan and sprinkle sesame seeds evenly over the top surface.

Bake the mixture in your preheated oven for 50 to 55 minutes, or until a toothpick inserted into the center comes out clean.

Allow the baked goods to cool in the pan for 30 minutes before removing the foil and transferring them to a cutting board, with the top side facing upwards. Cut the cooled treats into 1 inch squares.
