Ingredients
- 2 teaspoons extra-virgin olive oil, or as needed
- 5 small onions, thinly sliced
- 1/4 teaspoon chili powder
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon ground coriander
- 1/4 teaspoon ground cumin
- 1/4 teaspoon ground ginger
- 5 tablespoons chickpea flour
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1 pinch salt
- 1 tablespoon tomato puree
- 1 tablespoon water, or as needed
- 1 tablespoon extra-virgin olive oil, divided, or to taste

Preheat your oven to a high temperature of 400 degrees Fahrenheit (or 200 degrees Celsius, if you prefer metric). Next, take a large baking sheet and cover it with parchment paper to prevent sticking.

In a pan over medium heat, warm some oil and add sliced onions. Continue to cook the onions, stirring occasionally, until they become translucent and soft, taking around 6-8 minutes. Add a pinch of chili powder to the onions and stir until well combined with the spices.

Meanwhile, in a separate bowl, whisk together chickpea flour, cumin, coriander, and salt until well blended. Then, add the cooked onions and tomato purée to the bowl, stirring until everything is well combined. Gradually add a small amount of water to achieve a smooth and easy-to-stir mixture.

Place 1-2 teaspoons of olive oil onto the prepared baking sheet, depending on your preference. Using a spoon, spread 2 tablespoons of the onion mixture onto the baking sheet for each bhaji. Gently flatten the mixture slightly with the back of a spoon.

Once you've prepared your baking sheet, place it in the preheated oven and bake for 20-25 minutes. After that, drizzle any remaining oil over the bhajis and continue baking until they turn golden brown, taking an additional 25 minutes.

Finally, remove your bhajis from the oven and let them cool down before serving.
