Baked Spaghetti Squash with Beef, Veggies, and Cheese
Ingredients
  • 1 spaghetti squash, halved and seeded
  • 1 pound ground beef
  • 1/2 cup diced green bell pepper
  • 1/2 cup diced red bell pepper
  • 1/4 cup diced red onion
  • 1 clove garlic, chopped
  • 1 (14.5 ounce) can Italian-style diced tomatoes, drained
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 1/4 cups shredded sharp Cheddar cheese
Instructions
1
Preheat the oven to its highest temperature setting, 375 degrees Fahrenheit or 190 degrees Celsius.
2
Position the squash on a flat baking surface, and place it inside the oven for 40 minutes, or until it reaches your desired level of tenderness. Once cooked, remove the squash from the oven and let it cool down.
3
To reduce heat levels in the oven, lower the temperature to 350 degrees Fahrenheit or 175 degrees Celsius.
4
Next, lightly coat a casserole dish with a thin layer of cooking oil or non-stick spray to prevent food from sticking.
5
In a large skillet, heat it over medium heat and cook the ground beef until it is evenly browned. Remove excess fat from the skillet, then add in the green pepper, red pepper, and red onion. Continue to cook and stir until all vegetables are tender.
6
Mix the cooked squash with tomatoes in the skillet, then season it with oregano, basil, salt, and pepper. Continue to cook until the squash mixture is heated through.
7
Remove the skillet from heat, then stir in 2 cups of cheese until it is fully melted. Transfer this mixture to the prepared casserole dish.
8
Place the skillet's contents in the preheated oven and bake for 25 minutes, or until it reaches your desired level of doneness. Once done, sprinkle the remaining cheese on top and continue baking for an additional 5 minutes, or until the cheese is melted.
