  • 1 (1 ounce) packet taco seasoning
  • 1 (14 ounce) can diced tomatoes and green chiles (such as RO*TEL®)
  • 8 ounces processed cheese food (such as Velveeta®), cubed
  • 1 (8 ounce) package cream cheese, cut into cubes
  • 4 ounces Gouda cheese
  • 1 jalapeno pepper, seeded and minced
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup half-and-half, or more as needed

Heat the oven to its highest temperature setting, which is 375 degrees Fahrenheit or 190 degrees Celsius.

Combine ground beef, a finely chopped red onion, and minced garlic in a large skillet over high heat until the meat is nicely browned and crumbly, taking approximately 5 minutes.

Discard any remaining liquid from the skillet. Add a packet of taco seasoning and thoroughly mix the ingredients together.

Transfer the cooked ground beef to an oven-safe container along with diced tomatoes, shredded Velveeta cheese, softened cream cheese, grated Gouda, chopped jalapeno peppers, and chopped cilantro.

Drizzle a moderate amount of half-and-half over the top (leave some for later adjustments to achieve the desired consistency).

Place the dish in the preheated oven without covering it and bake for 20 minutes.

Take the dish out of the oven, stir the contents, and adjust the thickness as needed by adding more half-and-half.
