Ingredients
- 2 pounds salted cod fish
- 5 large potatoes, peeled and sliced
- 3 large onions, sliced
- 3/4 cup olive oil
- 2 cloves garlic, minced
- 1 tablespoon chopped fresh parsley
- 1 1/2 teaspoons crushed red pepper flakes
- 1 teaspoon paprika
- 3 tablespoons tomato sauce
Instructions
1
Soak the cod in cold water for several hours or overnight, changing the water multiple times. Remove the cod from the water and rinse it thoroughly.
2
Heat a large pot of water until it reaches a rolling boil. Cook the cod for 5 minutes; remove from heat and let cool, leaving it in large pieces. Set the cod aside for further use.
3
Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius).
4
In an 8x11 casserole dish, create a layered effect by placing half of the sliced potatoes on the bottom, followed by all of the cod pieces and then all of the onions. Top this layer with the remaining potato slices. In a small bowl, combine olive oil, minced garlic, chopped parsley, dried pepper flakes, paprika, and tomato sauce. Pour the mixture evenly over the casserole.
5
Bake the casserole in your preheated oven for 45 minutes, or until the potatoes are tender and easily pierced with a fork.
