Baked Pork Chops with Caramelized Onion Rice
Ingredients
  • 2 tablespoons butter
  • 1 onion, diced
  • 1 pinch seasoned salt, or to taste
  • 6 thin bone-in pork chops
  • 1 (14 ounce) can beef consomme
  • 10 fluid ounces water
  • 1 1/2 cups white rice
Instructions
1
Preheat the oven to a high temperature, 375 degrees F (190 degrees C), to prepare it for cooking.
2
Melt a generous amount of butter in a large, deep pan over medium heat. Gradually cook and stir the onion until it reaches a golden brown color, taking around 15 to 20 minutes. Transfer the cooked onion to a plate for later use.
3
Apply a generous amount of seasoned salt on all sides of each pork chop. Place the pork chops in the same large, deep pan and cook until they are nicely browned on both sides, taking about 1 to 2 minutes per side.
4
Mix the beef consomme with water in a large, rectangular baking dish. Combine this mixture with the cooked rice; add the caramelized onion that you prepared earlier. Arrange the pork chops over the rice in a single layer, making sure they fit comfortably.
5
Cover the baking dish with aluminum foil and place it in the preheated oven. Continue to bake until the pork is cooked through, which can take anywhere from 45 to 60 minutes. To check if the pork is cooked, insert an instant-read thermometer into the center of the meat and wait for it to reach at least 145 degrees F (63 degrees C).
