Combine water, salt, and sugar in a large bowl and stir until the ingredients are fully incorporated. Add hot sauce to the mixture and continue stirring until it is well combined. Place chicken pieces in the bowl with the brine solution and refrigerate for 30 minutes to 1 hour. Strain the brine from the bowl.

Preheat your oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper and place a metal rack on top. Spray the rack with cooking spray for non-stick performance.
