- 3/4 cup grated Parmesan cheese, divided
- 3/4 cup tomato pasta sauce
- 2 teaspoons Italian seasoning

Firstly, preheat your oven to the desired temperature of 350 degrees F (175 degrees C). This will ensure that the cooking process proceeds as planned. Next, take a moment to brush both sides of your eggplant slices with oil, allowing them to absorb the liquid and become tender. Place these slices on a baking sheet, making sure they are evenly spaced and not overlapping. Finally, sprinkle some garlic powder over the eggplant slices for added flavor.

While your oven is preheated, heat 2 tablespoons of oil in a large skillet over medium heat. This will create an ideal environment for cooking the vegetables and cheese mixture together. Add some onion, garlic, tomatoes, and spinach to the skillet, stirring constantly until the spinach has wilted and the tomatoes have released their juices. This should take about 2 minutes.
