Ingredients
- 1 medium (1 1/2 pound) cooked lobster
- 2 tablespoons butter
- 1 shallot, finely chopped
- 1 3/8 cups fresh fish stock
- 1/4 cup white wine
- 1/4 cup heavy cream
- 1/2 teaspoon hot English mustard
- 2 tablespoons chopped fresh parsley
- 1 tablespoon fresh lemon juice
- salt and freshly ground black pepper to taste
- 1/4 cup freshly grated Parmesan cheese
Instructions
1
Gather all the necessary ingredients before commencing with the recipe.\nCut the lobster into two equal halves lengthwise, carefully separating it from its shell. Next, extract any remaining meat from the claws, tail, and head of the lobster. Break the extracted meat into smaller pieces and return it to its original shell.
2
Melt a generous amount of butter in a large skillet over medium heat. Introduce the shallot into the pan and cook, stirring occasionally, until it becomes tender.
3
Mix in a combination of fish stock, white wine, and heavy cream. Bring the mixture to a boil and continue cooking until it has reduced by half. Add some chopped parsley, a squeeze of fresh lemon juice, a dash of mustard, and a pinch of salt and pepper to the sauce.
4
Preheat your oven's broiler to the desired temperature. Arrange the stuffed lobster halves on a suitable broiling pan or baking sheet. Pour the prepared sauce over the meat and sprinkle with grated Parmesan cheese.
5
Place the stuffed lobster halves under the preheated broiler and cook until just golden brown, taking approximately 3 to 4 minutes.
6
Serve the dish immediately.
