Ingredients
- 8 cut up chicken pieces
- 8 medium potatoes, peeled and quartered
- salt to taste
- ground white pepper to taste
- 4 cloves garlic, crushed
- 1/2 cup extra virgin olive oil
- 1 cup fresh lemon juice

Preheat your oven to a high temperature of 425 degrees Fahrenheit (220 degrees Celsius).

Take a large baking dish and add the chicken and potatoes. Sprinkle them generously with salt and white pepper to taste.

In a separate bowl, whisk together minced garlic, olive oil, and freshly squeezed lemon juice. Pour this mixture over the chicken and potatoes in the baking dish.

Cover the dish with aluminum foil to prevent drying out during cooking.

Bake in your preheated oven for 30 minutes, undisturbed.

Remove the foil and increase the oven temperature to a very high heat of 475 degrees Fahrenheit (245 degrees Celsius).

Continue baking until the chicken and potatoes are golden brown, taking around 30 minutes to achieve this result.
