- 2 large skinless, boneless chicken breast halves
- 1 pinch red pepper flakes, or to taste
- 2 roma tomatoes, chopped
- 2 large mushrooms, sliced
- 1 clove garlic, chopped
- 1/4 cup grated Parmesan cheese, divided
- 2 slices prosciutto
- 4 ounces Brie cheese, cut into 1/4-inch slices

Preheat your oven to a high temperature of 400 degrees Fahrenheit (200 degrees Celsius).

Next, combine white wine and water in a 9x13-inch baking dish. This will serve as the base for our dish.

Meanwhile, blend oregano, black pepper, and salt in a separate bowl. Using your fingers or a spoon, apply the oregano mixture evenly to both sides of chicken breasts. Place these coated chicken breasts in the prepared baking dish.

To add flavor, sprinkle red pepper flakes over the chicken breasts. Then, bake the chicken in the preheated oven for 25 minutes.

After 25 minutes of baking, arrange sliced tomatoes, mushrooms, and minced garlic around the chicken breasts. Sprinkle 2 tablespoons of Parmesan cheese over the top.

Continue baking until the chicken is cooked through, meaning it's no longer pink in the center and the juices run clear. This should take around 15 more minutes.

At this point, use an instant-read thermometer to check the internal temperature of the chicken. It should read at least 165 degrees Fahrenheit (74 degrees Celsius).

Finally, sprinkle the remaining 2 tablespoons of Parmesan cheese over the chicken. Place a slice of prosciutto on top of each chicken breast, followed by 2 to 3 slices of Brie cheese arranged diagonally.

Bake the dish for an additional 5 to 10 minutes, or until the Brie cheese is melted and gooey.
