Baked Eggs in Avocado with Bacon
Ingredients
  • 2 small eggs
  • 1 avocado, halved and pitted
  • 2 teaspoons chopped fresh chives, or to taste
  • 1 pinch dried parsley, or to taste
  • 1 pinch sea salt and ground black pepper to taste
  • 2 slices cooked bacon, crumbled

Preheat your oven to the high setting of 425 degrees Fahrenheit (220 degrees Celsius).

Take eggs and carefully pour them into a bowl, making sure the yolks remain unbroken.

Position avocado halves in a baking dish, positioning them along the rim so they won't topple over. Gently pour 1 egg yolk into each avocado cavity, continuing to fill it with egg white until full. Repeat the process for the remaining egg yolk, egg white, and avocado halves. Season each filled avocado with a sprinkle of chives, parsley, sea salt, and pepper.

Carefully place the baking dish in the preheated oven and bake until the eggs are cooked through, approximately 15 minutes. Add a layer of crispy bacon on top of the avocado.
