Ingredients
- 3 large eggplant, peeled and thinly sliced
- 2 large eggs, beaten
- 4 cups Italian seasoned bread crumbs
- 6 cups spaghetti sauce, divided
- 1 (16 ounce) package mozzarella cheese, shredded and divided
- 1/2 cup grated Parmesan cheese, divided
- 1/2 teaspoon dried basil
Instructions
1
Firstly, preheat your oven to 350 degrees Fahrenheit or 175 degrees Celsius for optimal results.
2
Next, prepare the eggplant slices by dipping them in a beaten egg and then coating them evenly with bread crumbs. Arrange the coated eggplant slices in a single layer on a baking sheet to ensure even cooking.
3
Then, bake the eggplant slices in the preheated oven for 5 minutes on each side to achieve a tender and crispy texture.
4
After that, prepare the baking dish by spreading spaghetti sauce to cover the entire bottom surface of a 9x13-inch rectangular container.
5
Now, layer the eggplant slices with spaghetti sauce in an alternating pattern. Top each layer of eggplant with a generous sprinkling of mozzarella and Parmesan cheese to add flavor and texture.
6
Repeat the layering process with the remaining sauce, eggplant slices, and cheese until all ingredients are used up. Finish by sprinkling a layer of mozzarella and Parmesan cheese on top to seal the dish.
7
Finally, sprinkle some fresh basil leaves on top of the final cheese layer for added aroma and visual appeal.
8
Place the baking dish in the preheated oven and bake until it reaches a golden brown color, approximately 35 minutes.
9
Once done, remove the dish from the oven and serve the eggplant lasagna hot to your guests.
