Ingredients
- 6 large potatoes, peeled and sliced
- 2 tablespoons vegetable oil
- 6 links pork sausage, sliced
- 1/4 cup diced white onion
- 1/4 cup chopped green onion
- 1/2 cup diced fresh tomato
- 1 teaspoon ground cumin
- 1/2 teaspoon ground dried thyme
- salt and pepper to taste
- 3 slices white sandwich bread, cut into 1-inch pieces
- 1/2 cup milk
- 1 cup shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 2 tablespoons vegetable oil
- 6 hard-boiled eggs, sliced

Firstly, preheat your oven to the desired temperature of 350 degrees F (175 degrees C).

Next, take a moment to grease a 9x13 inch glass baking dish with some cooking spray or oil.

Then, fill a large pot with salted water and add the potatoes. Bring the mixture to a rolling boil over high heat, before gradually decreasing the heat to medium-low and letting it simmer for approximately 20 minutes, or until they're tender.

After the potatoes have cooked, drain them and allow them to air dry for a minute or two.

While the potatoes are drying, heat some vegetable oil in a large skillet over medium heat. Cook the sausage in the hot oil for about 5 minutes, stirring occasionally.

Then, add the white onions and green onions to the skillet with the sausage. Continue cooking for another 5 minutes, stirring occasionally.

Next, stir in the tomato paste, cumin, and thyme into the skillet mixture. Season with salt and pepper to taste.

Reduce the heat to low and let the sausage mixture simmer for 10 minutes, stirring occasionally.

While the sausage is cooking, prepare the bread cubes by placing them in a bowl. Pour some milk over the bread, making sure each piece is well-coated.

Arrange half of the cooked potato slices at the bottom of the prepared baking dish. Spread the sausage mixture evenly over the potatoes.

Then, add layers of sliced eggs, about half of the moistened bread, mozzarella cheese, remaining potato slices, and finally the remaining moistened bread. Top it all off with a layer of Parmesan cheese.

Finally, bake the dish in the preheated oven until it's heated through and golden brown, approximately 30 minutes.
