Baked Cod with Butter and Lemon

  • 4 tablespoons butter, divided
  • 1/2 sleeve buttery round crackers (such as RitzĀ®), crushed
  • 1 pound thick-cut cod loin
  • 1/2 medium lemon, juiced
  • 1/4 cup dry white wine
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped green onion
  • 1 medium lemon, cut into wedges

Preheat the oven to a high temperature of 400 degrees Fahrenheit (200 degrees Celsius).

Put 2 tablespoons of butter into a microwave-safe container. Heat in the microwave on maximum power for approximately 30 seconds. Mix the melted butter with round crackers until well combined.

Place an additional 2 tablespoons of butter into a rectangular baking dish measuring 7 inches by 11 inches. Melt the butter in the oven that has been preheated to the desired temperature, for 1 to 3 minutes. Take the dish out of the oven.

Coat both sides of the cod fish with the melted butter in the baking dish.

Bake the cod fish in the preheated oven for 10 minutes. Remove it from the oven; add lemon juice, wine, and the buttery cracker mixture on top. Return it to the oven and continue baking until the fish is opaque and flakes easily with a fork, approximately 10 more minutes.
