- 1 (3 pound) whole chicken, cut into pieces
- 2 (28 ounce) cans whole peeled tomatoes, chopped, juice reserved
- 2 cups small fresh okra
- 2 bay leaves
- 5 cups chicken broth
- salt and black pepper to taste
Instructions

Preheat your oven to a medium-high heat setting of 350 degrees Fahrenheit (175 degrees Celsius).

Arrange the uncooked rice in a rectangular shape at the bottom of a 10x15 inch baking dish.

Layer the chicken pieces, sliced tomatoes, okra pods, and bay leaves on top of the rice.

Pour the chicken broth and the reserved tomato juice over the ingredients, adding a pinch of salt and pepper to taste.

Cover the dish with a lid or aluminum foil and bake in the preheated oven for 2 hours, or until the chicken is tender and falls apart easily.
