Ingredients
- 1 1/2 pounds boneless chicken thighs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- salt and freshly ground black pepper to taste
- 2 tablespoons olive oil, divided
- 8 ounces white mushrooms, sliced
- 4 cloves garlic, smashed
- 1 teaspoon herbes de Provence
- 1 medium onion, cut crosswise into 6 rings
- 1/2 cup dry white wine
- snipped fresh chives or parsley for garnish (optional)
Instructions
1
Preheat your oven to the optimal temperature of 350 degrees Fahrenheit (175 degrees Celsius).
2
Gently wipe the chicken thighs dry with paper towels to remove excess moisture. In a small container, mix together garlic powder, onion powder, salt, and pepper to create the perfect seasoning blend.
3
Sprinkle this seasoning mixture evenly on both sides of the chicken thighs.
4
Heat 1 tablespoon of olive oil in a 12-inch oven-safe skillet over medium heat.
5
Gently swirl the pan to coat its bottom with the hot oil, ensuring an even layer.
6
Place seasoned chicken thighs in the skillet and cook until they develop a rich brown color, approximately 3 minutes.
7
Flip the thighs over and continue cooking for another 2 minutes to achieve a perfectly browned second side.
8
Transfer the cooked chicken thighs to a plate and keep them warm, ready for serving.
9
Add an additional 1 tablespoon of olive oil to the same skillet.
10
Introduce sliced mushrooms into the pan and cook, stirring occasionally, for about 2 minutes.
11
Add minced garlic cloves to the skillet and stir for an additional minute, allowing their flavors to meld with the mushrooms.
12
Move the mushrooms to one side of the skillet and place 3 onion rings into the empty space.
13
Carefully position a browned chicken thigh on top of each onion slice.
14
Move the mushrooms to create an empty space in the skillet, then place the remaining onion rings and chicken thighs on top.
15
Redistribute the mushrooms evenly around the skillet to create a visually appealing dish.
16
Pour white wine over the top of the ingredients, covering them with a layer.
17
Transfer the skillet to your preheated oven and bake until the chicken thighs reach a safe internal temperature of 165 degrees Fahrenheit (74 degrees Celsius), which should take about 15 to 20 minutes.
18
Use an instant-read thermometer to verify the internal temperature of the chicken.
19
Serve each chicken piece with a slice of cooked onion and some sautéed mushrooms.
20
Garnish the dish with chopped chives or parsley for a finishing touch.
