Oven-Baked Chicken Thighs with Pasta and Parmesan Cheese
Ingredients
  • 1/2 cup butter
  • 1 onion, chopped
  • 2 tablespoons dried basil
  • 1 tablespoon red pepper flakes
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 3 pounds chicken thighs
  • 1 pound linguine pasta
  • 2 (10 ounce) packages frozen chopped spinach, thawed and squeezed dry
  • 1 cup grated Parmesan cheese
Instructions
1
First, set the oven to 350 degrees F (175 degrees C).
2
Melt butter in a 9x13-inch baking dish within the oven while it warms up, approximately 5 minutes.
3
Combine onion, basil, red pepper flakes, salt, and black pepper in the melted butter. Add chicken thighs, ensuring they are evenly coated with the onion mixture and positioned skin-side up.
4
Bake in the preheated oven until the chicken reaches an internal temperature of 165 degrees F (74 degrees C), indicated by a lack of pinkness at the bone and clear juices, approximately 1 hour.
5
Use an instant-read thermometer to check for doneness near the bone.
6
Remove the chicken from the baking dish.
7
As the chicken is nearing completion, bring a large pot of salted water to a rolling boil.
8
Cook pasta in the boiling water until it reaches a tender yet firm texture, about 11 minutes; drain excess water.
9
Mix spinach into the onion-butter sauce until it is fully incorporated. Add linguine and Parmesan cheese, tossing to combine.
10
Place the cooked chicken on top of the pasta mixture.
