Baked Chicken Piccata
Ingredients
  • 1/4 cup butter
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon cantanzaro herbs (such as Savory Spice Shop®)
  • 1 teaspoon garlic salt, divided
  • 1 pound boneless, skinless chicken breasts, sliced horizontally
  • 1/2 teaspoon black pepper
  • 1/2 cup chicken bone broth
  • 1/4 cup lemon juice, or to taste
  • 2 tablespoons capers
  • 1/4 cup dry white wine, such as Pinot Grigio
  • 1 lemon, sliced
Instructions
1
First, preheat your oven to 400 degrees F (200 degrees C), ensuring it reaches the desired temperature. Next, place a generous amount of butter into a large cast iron skillet and gently insert it into the oven to allow the butter to melt, taking care not to scorch or burn the butter.
2
In a separate dish, combine flour, Parmesan cheese, herbs, and 1/2 teaspoon of garlic salt. Mix these ingredients together until they are well combined.
3
To season the chicken, sprinkle the remaining 1/2 teaspoon of garlic salt and a pinch of black pepper over it. Then, coat the chicken evenly with the flour mixture.
4
Using oven mitts for protection, carefully remove the skillet from the oven and whisk together bone broth and lemon juice in a separate bowl. Pour this mixture into the skillet with melted butter, taking care not to splash.
5
Place the flour-seasoned chicken breasts into the skillet and sprinkle with capers. Drizzle some of the melted butter mixture over the chicken, making sure it's evenly coated.
6
Return the skillet to the oven and bake until the chicken is no longer pink in the center and the juices run clear, a process that typically takes 25 to 30 minutes. If the skillet's liquid evaporates too quickly, add additional bone broth and lemon juice to maintain a suitable consistency.
7
Position an oven rack about 6 inches from the heat source and preheat the oven's broiler. Carefully pour a small amount of wine into the bottom of the skillet, taking care not to spill.
8
Place the chicken under the broiler and cook until it is lightly browned on top. Spoon the sauce over the chicken, making sure it's evenly coated. Finally, garnish with lemon slices to complete your dish.
