Baked Beef and Bean Chimichangas

  • 3/4 cup chopped onion
  • 3/4 cup diced green bell pepper
  • 1 1/2 cups whole kernel corn
  • 2 cups taco sauce
  • 2 teaspoons chili powder
  • 1 teaspoon garlic salt
  • 1 teaspoon ground cumin
  • 1 (16 ounce) can refried beans
  • 8 (12 inch) flour tortillas
  • 1 (16 ounce) package shredded Monterey Jack cheese
  • 1 tablespoon butter, melted

  • 1 tomato, diced

Heat the oven to its highest temperature setting, which is 350 degrees F (175 degrees C).

Sear the ground beef in a hot skillet over high heat, removing any excess fat that accumulates. Add the sliced onion, diced bell pepper, and frozen corn to the skillet and continue cooking for approximately 5 minutes more, or until the vegetables have reached a tender state. Introduce the taco sauce into the mixture and blend it with the chili powder, garlic salt, and cumin until well combined. Allow the mixture to heat through completely before removing it from the heat source and setting it aside.

Open the can of beans and apply a thin layer to each tortilla. Place the beef mixture in the center of each tortilla and then add as much shredded cheese as desired. Roll up the tortillas, placing them seam-side down on a baking sheet. Apply melted butter to each tortilla using a brush.

Place the rolled tortillas in the preheated oven and bake for 30 to 35 minutes, or until they have turned a golden brown color. Serve with lettuce and tomato.
